Gluten-free & Dairy-free Fudgy Brownies

These brownies are so fudgy, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

  • 2 eggs
  • 1 egg yolk
  • 1 tablespoon coconut oil melted
  • 1 tsp vanilla extract
  • 1 cup sugar can use a sugar substitute
  • ¼ cup cacao powder unsweetened
  • 1 cup gluten-free flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 cup non-dairy chocolate chips
  • 6 tablespoon non-dairy butter
  • ¼ cup non-dairy chocolate chips for mixing in

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, melt together the 1 cup of chocolate chips, butter, and cacao powder until smooth.
  3. In a separate bowl, combine the eggs, sugar, coconut oil, and vanilla extract until smooth. Mix in the chocolate mixture. Mix in the gluten-free flour, baking powder, and salt until you have a thick batter. Fold in the chocolate chips.
  4. Spread the batter into the prepared pan and bake for about 18 minutes or until a toothpick comes out clean. The less you cook them, the fudgier they will be! Enjoy!
