Gluten-free & Dairy-free Honey Olive Oil Chocolate Cake

This honey sweetened chocolate olive oil cake is gluten-free, dairy-free, refined sugar-free, and oh so delicious!

Ingredients
  

  • ½ cup extra virgin olive oil
  • ½ cup Wedderspoon manuka honey
  • 2 eggs
  • cup non-dairy milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon espresso powder
  • 1 cup gluten-free flour
  • ½ cup cacao powder
  • 1 teaspoon baking soda
  • pinch of salt
  • optional berries for topping

Method
 

  1. Preheat oven to 350℉ and line a small cake pan with oil and parchment paper.
  2. In a bowl, mix together the wet ingredients until smooth. Mix in the dry ingredients until you have a smooth batter.
  3. Spread this into the prepared pan and bake for about 24-27 minutes or until a toothpick comes out clean. Let cool before slicing and enjoying!
