Gluten-free & Dairy-free Lemon Cake Bars

These lemon cake bars are gluten-free, dairy-free, easy to make, and absolutely delicious!

Ingredients
  

  • ½ cup non-dairy butter can sub ghee or regular butter
  • 2 eggs
  • 3 tablespoon lemon zest
  • 1 ½ tablespoon lemon juice
  • ¾ cup gluten-free flour I use King Arthur measure for measure flour!
  • ½ cup sugar can use a sugar substitute
  • teaspoon baking powder
  • pinch of salt
  • splash of vanilla extract
For the Icing:
  • ½ cup powdered sugar
  • 2 teaspoon lemon juice
  • water to thin

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl using a hand mixer, cream the butter until light and fluffy. Add in the eggs and lemon juice and cream again until combined. Add in the sugar and whip again until combined.
  3. Fold in the dry ingredients until smooth. Fold in the lemon zest.
  4. Spread the batter into the prepared pan and bake for about 22-24 minutes. Let cool before mixing up the icing and drizzling over top. Enjoy!
