I wasn't really sure what to call these, but I decided lemon cake bars was the way to go! They remind me of brownies, but without the chocolate and instead alllll the lemon! They are super simple to make, gluten-free, dairy-free, and absolutely delicious!

Ingredients

- lemons and lemon juice
- gluten-free flour
- sugar
- non-dairy butter or ghee
- eggs
- baking powder
- vanilla extract

Gluten-free & Dairy-free Lemon Cake Bars
These lemon cake bars are gluten-free, dairy-free, easy to make, and absolutely delicious!
Ingredients
- ½ cup non-dairy butter can sub ghee or regular butter
- 2 eggs
- 3 tablespoon lemon zest
- 1 ½ tablespoon lemon juice
- ¾ cup gluten-free flour I use King Arthur measure for measure flour!
- ½ cup sugar can use a sugar substitute
- ⅓ teaspoon baking powder
- pinch of salt
- splash of vanilla extract
For the Icing:
- ½ cup powdered sugar
- 2 teaspoon lemon juice
- water to thin
Instructions
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- In a bowl using a hand mixer, cream the butter until light and fluffy. Add in the eggs and lemon juice and cream again until combined. Add in the sugar and whip again until combined.
- Fold in the dry ingredients until smooth. Fold in the lemon zest.
- Spread the batter into the prepared pan and bake for about 22-24 minutes. Let cool before mixing up the icing and drizzling over top. Enjoy!
