Gluten-free & Dairy-free Mini Banana Muffins

These mini banana muffins are gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • 2 ripe bananas mashed
  • ½ cup coconut oil melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup gluten-free flour
  • ½ teaspoon baking soda
  • cup gluten-free oats
  • ½ cup sugar
  • cup nondairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and grease 24 mini muffin tins.
  2. In a large bowl, mix together the mashed banana, coconut oil, egg, vanilla extract, and sugar until well combined.
  3. Mix in the flour, oats, and baking soda until well combined. Fold in the chocolate chips.
  4. Scoop the batter evenly into the prepared muffin pans and bake for 15-20 minutes, or until golden brown. Let cool completely before enjoying!
