Gluten-free & Dairy-free Mini Banana Muffins
These mini banana muffins are gluten-free, dairy-free, simple to make, and absolutely delicious!
Ingredients
- 2 ripe bananas mashed
- ½ cup coconut oil melted
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup gluten-free flour
- ½ teaspoon baking soda
- ⅔ cup gluten-free oats
- ½ cup sugar
- ⅓ cup nondairy chocolate chips
Instructions
- Preheat oven to 350℉ and grease 24 mini muffin tins.
- In a large bowl, mix together the mashed banana, coconut oil, egg, vanilla extract, and sugar until well combined.
- Mix in the flour, oats, and baking soda until well combined. Fold in the chocolate chips.
- Scoop the batter evenly into the prepared muffin pans and bake for 15-20 minutes, or until golden brown. Let cool completely before enjoying!
