Gluten-free & Dairy-free Oatmeal Chocolate Chip Cookie Bars

These oatmeal chocolate chip cookie bars are gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

  • 1 egg
  • ½ cup non-dairy butter
  • ½ cup granulated sugar
  • cup brown sugar can sub coconut sugar
  • splash of vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 cup gluten-free flour
  • 1 ½ cup gluten-free oats
  • pinch of salt
  • ¾ cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a stand mixer, cream together the butter and sugars until fluffy. Mix in the vanilla and egg until smooth.
  3. Mix in the dry ingredients. Fold in the chocolate chips.
  4. Spread the dough into your prepared pan and bake for about 12-16 minutes, depending on how gooey you want them. Top with flaky sea salt, let cool, and enjoy!
