    These oatmeal chocolate chip cookie bars are simply a dream! They have the best soft texture with a crunchy outside. These oatmeal cookie bars are gluten-free, dairy-free, simple to make, and absolutely delicious!

    This was inspired by my gf & df oatmeal chocolate chip cookies recipe!

    Ingredients

    Here are the ingredients you'll need:

    • gluten-free oats
    • gluten-free flour
    • baking soda
    • baking powder
    • cinnamon
    • egg
    • non-dairy butter
    • sugar
    • brown sugar or coconut sugar
    • vanilla
    • non-dairy chocolate chips

    Store in the fridge for up to 4 days!

    Top tip

    If you want these extra gooey, do not overbake! And let them cool completely so you can slice them.

    Gluten-free & Dairy-free Oatmeal Chocolate Chip Cookie Bars

    These oatmeal chocolate chip cookie bars are gluten-free, dairy-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • 1 egg
    • ½ cup non-dairy butter
    • ½ cup granulated sugar
    • ⅔ cup brown sugar can sub coconut sugar
    • splash of vanilla extract
    • ½ teaspoon baking soda
    • ½ teaspoon baking powder
    • ½ teaspoon cinnamon
    • 1 cup gluten-free flour
    • 1 ½ cup gluten-free oats
    • pinch of salt
    • ¾ cup non-dairy chocolate chips

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. In a stand mixer, cream together the butter and sugars until fluffy. Mix in the vanilla and egg until smooth.
    3. Mix in the dry ingredients. Fold in the chocolate chips.
    4. Spread the dough into your prepared pan and bake for about 12-16 minutes, depending on how gooey you want them. Top with flaky sea salt, let cool, and enjoy!

      Can I use honey or maple syrup instead of the granulated sugar?
