Method
- Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
- In a large bowl, mix together the peanut butter, vanilla, eggs, and maple syrup until smooth. Mix in the oats, almond flour, baking soda, and salt until well combined. Fold in the chocolate chips.
- Begin scooping the dough (it will be sticky) into about 1 ½ tablespoon sized balls and placing on prepared baking sheets. Lightly flatten them.
- Bake for about 8 minutes and let cool. Enjoy!
