    These peanut butter oat cookies are the most delicious and simple cookies you will ever make. If you're a peanut butter lover like me, these are the perfect healthy cookie for you! These only require a handful of ingredients and are so quick to make. They're gluten-free, dairy-free, refined sugar-free, and so tasty!

    Ingredients

    Here are the ingredients you'll need:

    • smooth, natural peanut butter
    • eggs
    • maple syrup or honey
    • gluten-free oats
    • almond flour
    • vanilla extract
    • baking soda
    • non-dairy chocolate chips

    These peanut butter oat cookies are gluten-free, dairy-free, refined sugar-free, simple to make, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • 2 eggs
    • 1 cup natural peanut butter smooth
    • ¼ teaspoon baking soda
    • 1 teaspoon vanilla extract
    • ⅓ cup maple syrup can sub honey!
    • 1 ½ cup gluten-free oats
    • 3 tablespoon almond flour
    • pinch of salt
    • ⅔ cup non-dairy chocolate chips

    Method
     

    1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
    2. In a large bowl, mix together the peanut butter, vanilla, eggs, and maple syrup until smooth. Mix in the oats, almond flour, baking soda, and salt until well combined. Fold in the chocolate chips.
    3. Begin scooping the dough (it will be sticky) into about 1 ½ tablespoon sized balls and placing on prepared baking sheets. Lightly flatten them.
    4. Bake for about 8 minutes and let cool. Enjoy!
