Gluten-free & Dairy-free PB&J Cookie Bars

These peanut butter & jelly cookie bars are gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • 2 eggs
  • ½ cup non-dairy butter melted
  • ½ cup smooth peanut butter natural
  • ¾ cup brown sugar or coconut sugar
  • 1 ½ cup almond flour
  • ½ cup gluten-free oats
  • 1 ½ teaspoon baking powder
  • splash of vanilla extract
  • ½ cup jam of choice

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, mix together all of the ingredients, except for the jam, until you have a cookie dough.
  3. Spread half of the dough into the prepared pan, add dollops of the jam on top, and swirl it into the dough using a knife. Add the remaining cookie dough on top and repeat with the rest of the jam.
  4. Bake for about 23-25 minutes and let cool completely before slicing and enjoying! These are very gooey, but in the best way!
