Gluten-free & Dairy-free Pistachio Blondies

These pistachio white chocolate blondies are gluten-free, dairy-free, simple to make, and abslutely delicious!

Ingredients
  

  • ¼ cup banana mashed
  • ¼ cup melted coconut oil can sub melted vegan butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 egg
  • 1 ⅔ cup almond flour
  • cup +1 tablespoon sugar can use a sugar substitute
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder
  • pinch of salt
  • ¼ cup crushed pistachios
  • ¼ cup non-dairy white chocolate chips

Method
 

  1. Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a large bowl, mix all wet ingredients until smooth.
  2. Mix in the dry ingredients. Fold in the pistachios and white chocolate chips.
  3. Spread into prepared pan and bake for 20-22 min. Let cool completely before slicing and enjoying! I drizzled mine with extra white chocolate afterwards.
