Gluten-free & Dairy-Free Raspberry Chocolate Chip Cookies

These raspberry chocolate chip cookies are gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • ½ cup vegan butter melted
  • 1 ½ cup gluten-free flour
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup non-dairy chocolate chips
  • cup freeze dried raspberries

Method
 

  1. Preheat oven to 350°F and line 2 baking sheets with parchment paper.
  2. In a bowl, whisk together the melted butter, egg, vanilla, and sugars until smooth.
  3. Mix in the dry ingredients until you have a cookie dough. Fold in the chocolate chips and raspberries.
  4. Scoop into large cookies and place about 2 inches apart on the prepared baking sheets. Bake for 9-11 minutes. Top with additional freeze dried raspberries and let cool. Enjoy!
