Gluten-free & Dairy-free Snickerdoodle Banana Bread

This snickerdoodle banana bread is gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • 1 cup mashed banana
  • cup coconut oil melted
  • cup honey
  • ¼ cup non-dairy milk
  • 2 eggs
  • 2 ¼ cup gluten-free flour
  • 2 teaspoon baking powder
  • 3 teaspoon cinnamon
For the cinnamon sugar topping:
  • 2 tablespoon granulated sugar can sub coconut sugar
  • 1 teaspoon cinnamon

Method
 

  1. Preheat oven to 350℉ and line a loaf pan with parchment paper.
  2. In a blender, add your mashed banana, melted coconut oil, milk, eggs, and honey. Blend until smooth.
  3. Add in the rest of your ingredients and blend until you have a smooth batter. Spread the batter evenly into the prepared loaf pan.
  4. Mix together the cinnamon sugar topping and sprinkle evenly over top of the loaf. Bake for about 35-40 minutes, or until a toothpick comes out clean. Let cool before slicing and enjoying!
