Gluten-free & Dairy-free Sourdough Blueberry Donuts

These sourdough blueberry donuts are gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • ½ cup gluten-free flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 egg
  • ¼ cup brown sugar can sub coconut sugar
  • ½ cup gluten-free sourdough discard
  • 2 tablespoon avocado oil
  • ¼ cup non-dairy milk
  • splash of vanilla extract
  • cup blueberries tossed in gluten-free flour to prevent them from sinking when baking
Optional Icing:
  • ½ cup powdered sugar
  • water to thin

Method
 

  1. Preheat oven to 350℉ and grease 8 donut molds.
  2. In a bowl, combine all wet ingredients until smooth. Mix in the dry ingredients until you have a smooth batter.
  3. Fold in the blueberries. Alternatively, you can add the blueberries while filling the donut molds with batter if you want them more evenly dispersed.
  4. Begin spooning the batter into the prepared donut molds. Bake for about 9-11 minutes or until a toothpick comes out clean. Let the donuts cool completely before topping with the optional icing. Enjoy!
