Gluten-free & Dairy-free Strawberry Cake Bars

These strawberry cake bars are gluten-free, dairy-free, easy to make, and absolutely delicious.

Ingredients
  

  • ½ cup non-dairy butter
  • 1 egg
  • 3 tablespoon agave can sub honey
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ cup sugar
  • 2 cup almond flour
  • 2 ½ tablespoon coconut flour
  • 1 tablespoon tapioca flour
  • ½ teaspoon baking powder
  • ½ cup freeze dried strawberries
  • non-dairy frosting of choice

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, whip together the butter, sugar, and agave until fluffy. Mix in the egg and extracts.
  3. Mix in the rest of the ingredients, except for the strawberries, until well combined. Fold in the strawberries.
  4. Press the dough into the pan and bake for about 15 minutes. Let cool before adding your frosting of choice and optional freeze dried strawberries. Slice and enjoy!
