Preheat oven to 375℉ and line 2 baking sheets with parchment paper.
Melt together the non-dairy butter and espresso powder until smooth. Mix this mixture with the egg, sugar, and vanilla until smooth.
Mix in the dry ingredients until you have a smooth cookie dough.
Begin scooping the dough into balls about 2 tablespoon in size. Place these on your prepared baking sheets, leaving about 2 inches in between them.
Bake for 9-10 minutes (you don't want to overbake them!) and let cool while you make the frosting.
You can either make your own frosting or use storebought for this. Mix the frosting with your espresso powder until smooth. Frost each cookie and enjoy!
