    Gluten-free & Dairy-free Tiramisu Cookies

    I don't know about you guys, but I love anything and everything tiramisu! I just never feel like actually making a tiramisu, let alone a gluten-free and dairy-free version. These cookies are the perfect solution! They're super simple to whip up, while being so so tasty. These cookies are gluten-free, dairy-free, and delicious!

    Ingredients

    Here are the ingredients you'll need:

    • gluten-free flour
    • non-dairy butter
    • espresso powder
    • tapioca flour, arrowroot starch, or corn starch
    • baking powder and baking soda
    • sugar
    • egg
    • vanilla extract
    • dairy-free frosting

    Ingredients
      

    For the cookies:

    • ½ cup nondairy butter melted
    • ½ tablespoon espresso powder
    • 1 egg
    • splash of vanilla extract
    • ¾ cup sugar
    • 1 ¼ cup gluten-free flour
    • 1 teaspoon tapioca flour can sub arrowroot starch or cornstarch
    • ½ teaspoon baking powder
    • ⅛ teaspoon baking soda

    For the frosting:

    • ½ cup non-dairy frosting of choice (I have my frosting recipe linked in the blog post)
    • 2 teaspoon espresso powder

    Instructions
     

    • Preheat oven to 375℉ and line 2 baking sheets with parchment paper.
    • Melt together the non-dairy butter and espresso powder until smooth. Mix this mixture with the egg, sugar, and vanilla until smooth.
    • Mix in the dry ingredients until you have a smooth cookie dough.
    • Begin scooping the dough into balls about 2 tablespoon in size. Place these on your prepared baking sheets, leaving about 2 inches in between them.
    • Bake for 9-10 minutes (you don't want to overbake them!) and let cool while you make the frosting.
    • You can either make your own frosting or use storebought for this. Mix the frosting with your espresso powder until smooth. Frost each cookie and enjoy!

      Hi there! This may be a dumb question but when you say mix the melted butter and espresso powder until smooth…we are talking about melting the butter to a liquid form right?

        I have the same question. I usually use flax egg replacement, but there might be something that works better for this recipe.

      Hi! I made these successfully once (big, yummy poofy dense cookies like in your video) but every attempt since then, my cookies come out flat and crumbly. Following your recipe exactly as I did before and I’m not sure what I could be doing wrong…any ideas?
