Grain-free & Dairy-free Cupcake Bars

These cupcake bars are perfectly fluffy and grain-free, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

  • ½ cup non-dairy butter
  • 1 egg
  • ½ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 3 tablespoon agave can use maple syrup or honey
  • ¼ cup sugar can use a sugar substitute
  • 2 cup almond flour
  • 2 ½ tablespoon coconut flour
  • 1 tablespoon tapioca flour
  • ½ teaspoon baking powder
  • frosting of choice My dairy-free frosting recipe
  • ¼ cup sprinkles *for the funfetti version!*

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. Using a hand mixer or stand mixer, whip together the butter and sugar until fluffy. Mix in the almond & vanilla extracts and agave.
  3. Slowly mix in the dry ingredients until well combined. Spread the batter into the prepared pan and bake for about 15 minutes.
  4. Let cool completely before adding optional frosting. Enjoy!
