    Grain-free & Dairy-free Cupcake Bars

    These cupcake bars are perfectly soft and heavenly! My family described these as cupcakes in a bar form, so that's exactly what I'm calling them. They're made with super simple ingredients, and I promise you'll love them. These are gluten-free, grain-free, dairy-free, and absolutely delicious!

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • coconut flour
    • sugar (can use a sugar substitute)
    • agave/honey
    • egg
    • non-dairy butter
    • tapioca flour
    • baking powder

    Ingredients Method

    Ingredients
      

    • ½ cup non-dairy butter
    • 1 egg
    • ½ teaspoon almond extract
    • 1 teaspoon vanilla extract
    • 3 tablespoon agave can use maple syrup or honey
    • ¼ cup sugar can use a sugar substitute
    • 2 cup almond flour
    • 2 ½ tablespoon coconut flour
    • 1 tablespoon tapioca flour
    • ½ teaspoon baking powder
    • frosting of choice My dairy-free frosting recipe

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. Using a hand mixer or stand mixer, whip together the butter and sugar until fluffy. Mix in the almond & vanilla extracts and agave.
    3. Slowly mix in the dry ingredients until well combined. Spread the batter into the prepared pan and bake for about 15 minutes.
    4. Let cool completely before adding optional frosting. Enjoy!

      These were yummy. Recipe doesn’t state when to put egg in so I just added it with the extracts. Took 25 min to cook.
