- sugar (can use a sugar substitute)
- agave/honey
- egg
- non-dairy butter
- tapioca flour
- baking powder

Grain-free & Dairy-free Cupcake Bars
These cupcake bars are perfectly fluffy and grain-free, gluten-free, dairy-free, and absolutely delicious!
Ingredients
- ½ cup non-dairy butter
- 1 egg
- ½ teaspoon almond extract
- 1 teaspoon vanilla extract
- 3 tablespoon agave can use maple syrup or honey
- ¼ cup sugar can use a sugar substitute
- 2 cup almond flour
- 2 ½ tablespoon coconut flour
- 1 tablespoon tapioca flour
- ½ teaspoon baking powder
- frosting of choice My dairy-free frosting recipe
Instructions
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- Using a hand mixer or stand mixer, whip together the butter and sugar until fluffy. Mix in the almond & vanilla extracts and agave.
- Slowly mix in the dry ingredients until well combined. Spread the batter into the prepared pan and bake for about 15 minutes.
- Let cool completely before adding optional frosting. Enjoy!
