Healthy Homemade Reese's Eggs

These homemade Reese's eggs are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 1 cup smooth, natural peanut butter *use cashew or almond butter to keep these paleo!
  • cup maple syrup
  • ½ cup almond flour
  • 3 tablespoon coconut flour
For the chocolate coating:
  • 1 cup non-dairy white chocolate chips
  • 1 teaspoon coconut oil
  • optional blue food coloring or spirulina
For the speckles:
  • 1 teaspoon cocoa powder mixed with 2 teaspoon water

Method
 

  1. Line a baking sheet with parchment paper.
  2. In a bowl, mix together the nut butter and maple syrup until combined. Mix in the almond flour and coconut flour until you have a smooth dough.
  3. Begin rolling and flattening the nut butter dough into "Reese's egg" shapes and placing along the prepared baking sheet. Place in the freezer to set for about 20-30 minutes.
  4. In a separate bowl, melt together the chocolate chips and coconut oil until smooth. Mix in your food coloring. Dip each nut butter egg into the chocolate until fully coated and return to baking sheet to harden.
  5. Mix together the cocoa powder and water and begin "splattering" the eggs with a paint brush to get the speckles. Enjoy!
