    Healthy Homemade Reese's Eggs

    I'm pretty sure we all agree that Reese's shapes (especially the eggs) are better than a normal Reese's...they just are! Reese's peanut butter cups were my favorite candy growing up and something I genuinely miss since embarking on my health journey. I have had this recipe for a few years now and it never fails me! I use cashew butter to keep them paleo, but if you can have peanuts, then I highly recommend using peanut butter in this recipe. These are vegan, paleo (if using cashew butter), gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • nut butter of choice
    • maple syrup
    • almond flour
    • coconut flour
    • non-dairy white chocolate chips
    • coconut oil

    Healthy Homemade Reese's Eggs

    These homemade Reese's eggs are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • 1 cup smooth, natural peanut butter *use cashew or almond butter to keep these paleo!
    • ⅓ cup maple syrup
    • ½ cup almond flour
    • 3 tablespoon coconut flour
    For the chocolate coating:
    • 1 cup non-dairy white chocolate chips
    • 1 teaspoon coconut oil
    • optional blue food coloring or spirulina
    For the speckles:
    • 1 teaspoon cocoa powder mixed with 2 teaspoon water

    Method
     

    1. Line a baking sheet with parchment paper.
    2. In a bowl, mix together the nut butter and maple syrup until combined. Mix in the almond flour and coconut flour until you have a smooth dough.
    3. Begin rolling and flattening the nut butter dough into "Reese's egg" shapes and placing along the prepared baking sheet. Place in the freezer to set for about 20-30 minutes.
    4. In a separate bowl, melt together the chocolate chips and coconut oil until smooth. Mix in your food coloring. Dip each nut butter egg into the chocolate until fully coated and return to baking sheet to harden.
    5. Mix together the cocoa powder and water and begin "splattering" the eggs with a paint brush to get the speckles. Enjoy!

      Hi Sami, can you leave out the protein powder if you do not have any on hand? Or will that affect the recipe consistency?! Any substitutions if it’s needed? Thanks in advance! 🙂

          Hi Lana! You can definitely use almond flour or coconut flour in place of the protein powder, however, you will need to add it slowly and adjust the amount until you get a texture you enjoy!:)
