In a bowl, mix together the peanut butter and granulated sweetener until smooth. Mix in the coconut flour.
Place this mixture into the fridge to firm up for about 20 minutes. Line a large baking sheet with parchment paper.
Begin rolling the peanut butter mixture into m&m-size balls and place onto the prepared baking sheet. Place the baking sheet into the freezer for at least 1 hour.
Once the peanut butter balls are frozen, begin melting the chocolate and coconut oil together until smooth. Coat each of the peanut butter balls in the chocolate until completely coated and return to baking sheet to set. Enjoy!
