I used to absolutely loveeeeee peanut butter m&m's growing up! They were always my candy of choice for movie nights. Nothing beats the soft peanut butter center and the crunchy chocolate shell. I simply had to try and recreate them with better-for-you ingredients! These are vegan, gluten-free, dairy-free, refined sugar-free, and super simple to make!

    Prep Time 10 minutes mins
    Servings: 50 m&m's
    Course: Dessert, Snack
    Cuisine: American
    Ingredients Method

    Ingredients

    • 1 cup smooth peanut butter natural, runny (use a peanut butter where the only ingredients are peanuts and salt!)
    • ¼ cup granulated monk fruit sweetener can sub any granulated sweetener you'd like!
    • ¾ cup +2 tablespoon coconut flour
    • 1 ½ cup non-dairy chocolate chips
    • 2 teaspoon coconut oil

    Method

    1. In a bowl, mix together the peanut butter and granulated sweetener until smooth. Mix in the coconut flour.
    2. Place this mixture into the fridge to firm up for about 20 minutes. Line a large baking sheet with parchment paper.
    3. Begin rolling the peanut butter mixture into m&m-size balls and place onto the prepared baking sheet. Place the baking sheet into the freezer for at least 1 hour.
    4. Once the peanut butter balls are frozen, begin melting the chocolate and coconut oil together until smooth. Coat each of the peanut butter balls in the chocolate until completely coated and return to baking sheet to set. Enjoy!

Do you think you could use almond butter instead of peanut butter? Just what I have on hand at the moment 😀

Do you have a favorite non dairy chocolate to use? I used one in the past and it did not melt beautifully haha
