No-Bake Chocolate Peanut Butter Brownies

These chocolate peanut butter brownies are no-bake, vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

Ingredients
  

For the brownie base:
  • cup smooth peanut butter natural
  • ½ cup maple syrup
  • ¼ cup non-dairy milk
  • cup cacao powder
  • cup coconut flour
For the peanut butter caramel filling:
  • 1 cup dates soaked in hot water for 10 minutes
  • cup smooth peanut butter natural
  • cup maple syrup
For the chocolate topping:
  • 1 cup non-dairy chocolate chips

Method
 

  1. Line an 8x8 pan with parchment paper and set aside.
  2. In a bowl, mix the brownie base ingredients until well combined. Press the dough into the prepared pan and place in the freezer while you make the caramel filling.
  3. In a food processor, combine the caramel filling ingredients and blend until smooth. Spread this evenly over the brownie base layer and return to the freezer for about 10 minutes.
  4. Melt the chocolate chips until smooth and spread evenly over the caramel layer. Let harden before slicing and enjoying!
