Paleo Apple Pie Donut Holes

These apple pie donut holes are paleo, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • ½ cup almond flour
  • 1 egg
  • 4 ½ tablespoon coconut flour
  • ¼ cup tapioca flour
  • ¼ cup coconut oil melted
  • 2 tablespoon honey
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • cup diced apples
  • ½ tablespoon cinnamon
  • ¾ teaspoon apple pie spice
For the optional icing (not paleo!):
  • ½ cup powdered sugar
  • water to thin
For a paleo icing:
  • ½ cup melted coconut butter
  • 1 tablespoon maple syrup

Method
 

  1. Preheat oven to 400℉ and line a baking sheet with parchment paper.
  2. In a bowl, combine the egg, coconut oil, honey, and vanilla until smooth. Mix in the dry ingredients until well combined.
  3. Fold in the diced apples. Let the dough sit for a few minutes before beginning to roll into ½-1 tablespoon sized balls.
  4. Place on the prepared baking sheet and bake for about 8-9 minutes. Let cool completely before dipping in your optional icing! Enjoy!
