Paleo Cinnamon Sugar Donut Holes

These cinnamon sugar donut holes are paleo, gluten-free, dairy-free, refined sugar-free, and oh so delicious!

Ingredients
  

  • ½ cup almond flour
  • 4 ½ tablespoon coconut flour
  • ¼ cup tapioca flour
  • 1 egg
  • ¼ cup coconut oil melted
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • splash of vanilla extract
  • ½ teaspoon cinnamon
  • 2 tablespoon honey
For the Cinnamon Sugar Coating:
  • 2 teaspoon cinnamon
  • ¼ cup coconut sugar can sub regular sugar if not paleo!
  • 4 tablespoon melted coconut oil or vegan butter

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a bowl, mix all ingredients until well combined. Let the dough sit for about 10-15 minutes to allow for the coconut flour to absorb the moisture.
  3. Begin rolling the dough into tablespoon-sized balls and place about an inch apart on the pan. Bake for 6-7 minutes and let cool.
  4. Melt some butter or coconut oil. In a separate bowl, mix together the cinnamon and coconut sugar. Dip each donut hole into the melted butter/oil and then into the cinnamon sugar mixture, so that they are fully coated. Enjoy!
