Paleo Coconut Cake

This coconut cake is paleo, gluten-free, dairy-free, refined sugar-free, simple to make, and absolutely delicious!

Ingredients
  

  • 4 eggs
  • cup coconut oil melted
  • ½ cup maple syrup
  • ½ cup coconut milk full-fat
  • splash of vanilla extract
  • ½ cup almond flour
  • cup coconut flour
  • 1 teaspoon baking soda
  • ¾ cup shredded coconut unsweetened

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl or stand mixer, mix together the eggs, coconut oil, coconut milk, maple syrup, and vanilla until smooth.
  3. Mix in the dry ingredients and fold in the coconut. Spread the batter into the prepared pan and sprinkle with additional shredded coconut.
  4. Bake for 25-30 minutes, or until a toothpick comes out clean. Let cool before slicing and enjoying!
