Method
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- In a bowl or stand mixer, mix together the eggs, coconut oil, coconut milk, maple syrup, and vanilla until smooth.
- Mix in the dry ingredients and fold in the coconut. Spread the batter into the prepared pan and sprinkle with additional shredded coconut.
- Bake for 25-30 minutes, or until a toothpick comes out clean. Let cool before slicing and enjoying!
