Paleo Date Caramel Brownies

These gooey date caramel brownies are paleo, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 2 eggs
  • cup maple syrup
  • ¼ cup coconut oil melted
  • 1 cup almond flour
  • ¼ cup cacao powder
  • ½ teaspoon baking soda
  • ½ cup non-dairy chocolate chips
For the Date Caramel Filling:
  • 1 cup dates soaked in hot water for 10 minutes
  • ¼ cup non-dairy milk
  • 2 tablespoon almond butter
  • splash of vanilla extract

Method
 

  1. Preheat oven to 350℉ and line a 8x8 pan with parchment paper.
  2. In a food processor, blend all of the date caramel ingredients until you have a smooth caramel. Set aside while you make the brownie batter.
  3. In a bowl, combine all of the brownie ingredients until you have a batter. Spread half of the batter into the prepared pan.
  4. Add your caramel layer on top of the brownie batter and smooth out evenly. Top with the rest of the brownie batter.
  5. Bake for about 18-22 minutes. Let cool completely before slicing and enjoying!
