Paleo Raspberry Thumbprint Cookies

These raspberry thumbprint cookies are paleo, gluten-free, dairy-free, refined sugar-free, and so tasty!

Ingredients
  

  • 4 cup almond flour
  • 1 cup monkfruit sugar substitute can use regular sugar if not paleo!
  • 2 teaspoon baking powder
  • 13 tablespoon coconut oil melted
  • 2 eggs
  • ½ cup coconut flour
  • 1 ¾ teaspoon almond extract
  • 1 teaspoon vanilla extract
  • ½ cup raspberry jam of choice
  • cup powdered sugar mixed with water to thin optional for drizzle (not paleo)

Method
 

  1. Preheat oven to 350℉ and line 2 large baking sheets with parchment paper.
  2. In a bowl, combine all of the ingredients except for the raspberry jam and powdered sugar.
  3. Once you have a cohesive dough, begin rolling into small balls and placing onto the prepared baking sheets.
  4. Press a "thumbprint" indent into the middle of each ball of dough and fill with raspberry jam. Bake for about 8-9 minutes.
  5. Let cool before adding optional icing drizzle and enjoy!
