Paleo & Vegan Blueberry Chocolate Fudge Bars

These blueberry chocolate fudge bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

For the blueberry base:
  • 1 cup blueberries if using frozen, thaw and drain excess liquid
  • ½ cup shredded coconut unsweetened
  • 2 tablespoon coconut cream
  • 1 tablespoon maple syrup
  • ¼ cup +1 tablespoon coconut flour
For the chocolate ganache:
  • cup coconut cream
  • cup non-dairy chocolate chips

Method
 

  1. Line a loaf pan with parchment paper and set aside.
  2. In a food processor, add the blueberry base ingredients and blend until you have a "dough."
  3. Press this dough into the prepared loaf pan and place in the freezer to set for about an hour.
  4. Melt together the chocolate chips and coconut cream until smooth. Remove the blueberry base from the freezer and spread the ganache over the blueberry layer.
  5. Place in the fridge to set for about an hour. Slice and enjoy!
