These blueberry chocolate fudge bars are so so dreamy! These have a soft blueberry coconut base layer and are topped with a chocolate fudge. I personally love the combination of any fruit + chocolate, and the blueberry is so so yum. They're paleo, vegan, gluten-free, dairy-free, refined sugar-free, no-bake, and so delicious!

- blueberry (fresh or frozen)
- shredded coconut (unsweetened)
- coconut cream
- maple syrup
- coconut flour
- non-dairy chocolate chips

Paleo & Vegan Blueberry Chocolate Fudge Bars
These blueberry chocolate fudge bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
For the blueberry base:
- 1 cup blueberries if using frozen, thaw and drain excess liquid
- ½ cup shredded coconut unsweetened
- 2 tablespoon coconut cream
- 1 tablespoon maple syrup
- ¼ cup +1 tablespoon coconut flour
For the chocolate ganache:
- ⅓ cup coconut cream
- ⅔ cup non-dairy chocolate chips
Instructions
- Line a loaf pan with parchment paper and set aside.
- In a food processor, add the blueberry base ingredients and blend until you have a "dough."
- Press this dough into the prepared loaf pan and place in the freezer to set for about an hour.
- Melt together the chocolate chips and coconut cream until smooth. Remove the blueberry base from the freezer and spread the ganache over the blueberry layer.
- Place in the fridge to set for about an hour. Slice and enjoy!
