Line a loaf pan with parchment paper and set aside.
In a food processor, add your dates, nut butter, and vanilla extract. Blend until creamy.
Scoop the creamy date mixture into a large bowl. Add in the almond flour and protein powder and mix until you have a sticky dough.
Press the dough into the prepared loaf pan and place in the freezer to set for about 30 minutes.
Melt your chocolate chips until smooth. Remove your protein bars from the freezer and slice into squares. Dip the bottom of each bar into the chocolate and place on a baking sheet with parchment paper. Return to freezer to set for about 15 minutes. Enjoy!
