These chewy date protein bars are simply a dream! They kind of remind me of a softer rxbar but taste even better. I love the simple ingredients that make these so easy to make. They're vegan, paleo, gluten-free, dairy-free, grain-free, refined sugar-free, and oh so delicious!

- dates
- vanilla protein powder
- almond flour
- nut butter of choice
- vanilla extract
- non-dairy chocolate chips

Paleo & Vegan Chewy Date Protein Bars
These chewy date protein bars are paleo, vegan, gluten-free, dairy-free, grain-free, refined sugar-free, and so delicious!
Ingredients
- 1 ½ cup dates soak in hot water for about 10 minutes to soften first!
- ⅓ cup vanilla protein powder of choice
- ½ cup almond flour
- ¼ cup smooth, natural nut butter of choice I have used both almond butter and peanut butter!
- 1 teaspoon vanilla extract
- ½ cup non-dairy chocolate chips
Instructions
- Line a loaf pan with parchment paper and set aside.
- In a food processor, add your dates, nut butter, and vanilla extract. Blend until creamy.
- Scoop the creamy date mixture into a large bowl. Add in the almond flour and protein powder and mix until you have a sticky dough.
- Press the dough into the prepared loaf pan and place in the freezer to set for about 30 minutes.
- Melt your chocolate chips until smooth. Remove your protein bars from the freezer and slice into squares. Dip the bottom of each bar into the chocolate and place on a baking sheet with parchment paper. Return to freezer to set for about 15 minutes. Enjoy!
Storage
Store the wet ingredients (lettuce, tomato, onion) separately from the dry ingredients (buns) in the fridge, and recombine when ready. Good for 2-3 days.
