Paleo & Vegan Chocolate Fudge Pop Tart

This chocolate fudge pop tart is all the nostalgia of a Pop Tart while being paleo, vegan, gluten-free, dairy-free, refined sugar-free, and oh so delicious!

Ingredients
  

For the chocolate pastry dough:
  • 4 tablespoon almond flour
  • 2 tablespoon cacao powder unsweetened
  • 1 tablespoon coconut flour
  • 5 teaspoon coconut oil melted
  • 4 teaspoon water
For the chocolate filling:
  • 1 ½ teaspoon almond butter smooth, natural
  • 2 tablespoon non-dairy chocolate chips
For the chocolate topping:
  • 3 tablespoon non-dairy chocolate chips
  • leftover chocolate filling
  • optional sprinkles omit if paleo!

Method
 

  1. Preheat oven to 350℉ and line a baking sheet with parchment paper.
  2. In a bowl, mix together the chocolate pastry dough ingredients until you have a dough.
  3. Split the dough in half and roll one half onto the parchment paper to create a rectangle. Melt together your chocolate filling ingredients until smooth. Add ⅔ of this mixture onto this piece of dough and spread evenly.
  4. Roll out the other half of the dough into the same rectangle shape and place it on top of the filling. Pinch together the edges using a fork.
  5. Bake the pop tart for about 17-19 minutes and let cool.
  6. Melt together the leftover chocolate filling with the additional chocolate chips to make the topping. Spread this over the pop tart and enjoy!
