Method
- Line a baking sheet with parchment paper and set aside.
- In a bowl, combine all ingredients, except for the ¼ cup shredded coconut for rolling in, until well combined.
- Let the mixture sit for about 10 minutes to allow the coconut flour to absorb some moisture.
- Roll the dough into bites and then coat in the extra shredded coconut and place on the prepared baking sheet.
- Place in the fridge to set for about 20 minutes. Enjoy!
