Paleo & Vegan Coconut Cookie Bites
These coconut cookie bites are paleo, vegan, gluten-free, dairy-free, refined sugar-free, no-bake, and so delicious!
Ingredients
- 1 ⅔ cup shredded coconut unsweetened
- ¼ cup maple syrup
- ¼ cup +2 tablespoon coconut cream
- 2 tablespoon coconut flour
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract
- ¼ cup shredded coconut for rolling the bites in! unsweetened
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a bowl, combine all ingredients, except for the ¼ cup shredded coconut for rolling in, until well combined.
- Let the mixture sit for about 10 minutes to allow the coconut flour to absorb some moisture.
- Roll the dough into bites and then coat in the extra shredded coconut and place on the prepared baking sheet.
- Place in the fridge to set for about 20 minutes. Enjoy!
