Paleo & Vegan Cookie Dough Caramel Bars

These cookie dough caramel bars are paleo, vegan, gluten-free, dairy-free, no-bake, refined sugar-free, and so delicious!

Ingredients
  

For the cookie dough layer:
  • cup almond butter smooth, natural
  • ¼ cup maple syrup
  • 1 cup coconut flour
  • ½ cup non-dairy milk
  • ¼ cup non-dairy chocolate chips
For the caramel filling:
  • 1 cup dates soaked in hot water for 10 minutes
  • cup peanut butter smooth, natural
  • cup maple syrup
  • pinch of salt
For the chocolate fudge topping:
  • cup non-dairy chocolate chips
  • cup canned coconut milk

Method
 

  1. Line an 8x8 pan with parchment paper and set aside.
  2. In a bowl, combine all of the cookie dough ingredients until you have a smooth cookie dough. Fold in the chocolate chips
  3. Press the cookie dough in the prepared pan and set aside while you make the filling.
  4. In a food processor, blend the soft dates, peanut butter, maple syrup, and salt until you have a smooth caramel. Spread this evenly over the cookie dough layer.
  5. Place the pan in the fridge while you melt together the chocolate fudge ingredients. Once you have a smooth chocolate mixture, spread this evenly over top of the caramel layer and let set in the freezer for at least 20 minutes.
  6. Slice and enjoy!
