Line an 8x8 pan with parchment paper and set aside.
In a bowl, combine all of the cookie dough ingredients until you have a smooth cookie dough. Fold in the chocolate chips
Press the cookie dough in the prepared pan and set aside while you make the filling.
In a food processor, blend the soft dates, peanut butter, maple syrup, and salt until you have a smooth caramel. Spread this evenly over the cookie dough layer.
Place the pan in the fridge while you melt together the chocolate fudge ingredients. Once you have a smooth chocolate mixture, spread this evenly over top of the caramel layer and let set in the freezer for at least 20 minutes.
