These cookie dough caramel bars are simply a dream! If you love all things cookie dough and gooey caramel, you will love these. These bars are paleo, vegan, no-bake, gluten-free, dairy-free, simple to make, and so delicious!

This was inspired by my caramel cookie bars! I also like to pair these with a batch of my fudgy flourless brownies.
Ingredients
Here are the ingredients you'll need:
- almond butter
- dates
- peanut butter
- maple syrup
- non-dairy milk
- maple syrup
- non-dairy chocolate chips
- coconut milk

Store in the fridge or freezer!
Top tip
I recommend storing these in the freezer as they are pretty soft at room temperature and taste delicious straight out of the freezer!
Paleo & Vegan Cookie Dough Caramel Bars
These cookie dough caramel bars are paleo, vegan, gluten-free, dairy-free, no-bake, refined sugar-free, and so delicious!
Ingredients
Method
- Line an 8x8 pan with parchment paper and set aside.
- In a bowl, combine all of the cookie dough ingredients until you have a smooth cookie dough. Fold in the chocolate chips
- Press the cookie dough in the prepared pan and set aside while you make the filling.
- In a food processor, blend the soft dates, peanut butter, maple syrup, and salt until you have a smooth caramel. Spread this evenly over the cookie dough layer.
- Place the pan in the fridge while you melt together the chocolate fudge ingredients. Once you have a smooth chocolate mixture, spread this evenly over top of the caramel layer and let set in the freezer for at least 20 minutes.
- Slice and enjoy!
