Paleo & Vegan Espresso Fudge Brownies

These espresso fudge brownies are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 2 flax eggs 2 tablespoon ground flaxseed mixed with 6 tablespoon water
  • ¼ cup coconut oil melted
  • ½ cup smooth almond butter natural
  • ½ cup brown sugar can sub coconut sugar
  • ½ cup cacao powder
  • 3 teaspoon instant espresso powder
  • ¼ teaspoon baking powder
  • ¼ cup almond flour
For the fudge frosting layer:
  • cup coconut cream
  • cup non-dairy chocolate chips
  • 1 teaspoon instant espresso powder

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, mix together the brownie ingredients until you have a sticky dough.
  3. Spread this evenly into the prepared pan and bake for 15-17 minutes. Let cool while you make the fudge frosting.
  4. Melt together the coconut cream and chocolate chips until smooth. Mix in the espresso powder. Spread this evenly over the brownie base and set in the fridge to set for about 10-20 minutes. Slice and enjoy!
