Paleo & Vegan Ice Cream Sandwiches

These ice cream sandwiches are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and oh so delicious!

Ingredients
  

For the cookie dough:
  • 1 cup almond butter smooth, natural
  • ½ cup maple syrup
  • 1 ½ cup almond flour
  • ½ cup non-dairy chocolate chips
For the ice cream filling:
  • 1 cup cashews soaked in hot water for 10 minutes
  • 1 15 oz. can coconut cream
  • ½ cup maple syrup

Method
 

  1. Line a loaf pan with parchment paper and set aside. In a bowl, combine all of the cookie dough ingredients.
  2. Press half of the cookie dough into the prepared pan and place in the freezer to set while you make the ice cream filling.
  3. In a blender, add all of the ice cream filling ingredients and blend until smooth. Pour this over the frozen cookie dough layer and return to the freezer to set for about 5-6 hours.
  4. Once the filling is set, add the remaining half of the cookie dough on top and press evenly. Return to freezer to set for about 30 minutes-1 hour. Slice into sandwiches and enjoy!
