I don't know about you guys, but I absolutely loveeee ice cream sandwiches! These homemade ice cream sandwiches are made with super simple and healthy ingredients. Not only are they delicious, but they are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and oh so fun!

Ingredients
Here are the ingredients you'll need:
- almond flour
- almond butter
- maple syrup
- non-dairy chocolate chips
- cashews
- coconut cream

Paleo & Vegan Ice Cream Sandwiches
These ice cream sandwiches are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and oh so delicious!
Ingredients
Method
- Line a loaf pan with parchment paper and set aside. In a bowl, combine all of the cookie dough ingredients.
- Press half of the cookie dough into the prepared pan and place in the freezer to set while you make the ice cream filling.
- In a blender, add all of the ice cream filling ingredients and blend until smooth. Pour this over the frozen cookie dough layer and return to the freezer to set for about 5-6 hours.
- Once the filling is set, add the remaining half of the cookie dough on top and press evenly. Return to freezer to set for about 30 minutes-1 hour. Slice into sandwiches and enjoy!
