Paleo & Vegan Mango Coconut Popsicles

These mango coconut popsicles are made with 3 simple ingredients and are paleo, vegan, gluten-free, dairy-free, refined sugar free, and delicious!

Ingredients
  

For the mango layer:
  • 1 ¾ cup mango fresh or frozen
  • ¼ cup coconut milk
For the coconut layer:
  • 1 ½ cup coconut milk
  • 2 tablespoon maple syrup or honey if not vegan!

Method
 

  1. Blend together the mango layer (thaw the mango if using frozen) ingredients until you have a puree. Once you have a puree, scoop about 2 tablespoon into each popsicle mold.
  2. In a bowl or blender, mix together the coconut layer ingredients and fill the rest of the popsicle molds with this. Add your popsicle sticks and freeze for about 5 hours before enjoying!
