These mango coconut popsicles are the perfect healthy and refreshing treat! They're made with simple and nutritious ingredients, and you only need a blender to make them. I love that they're also paleo, vegan, gluten-free, dairy-free, and refined sugar free!

Paleo & Vegan Mango Coconut Popsicles
For the mango layer:
- 1 ¾ cup mango fresh or frozen
- ¼ cup coconut milk
For the coconut layer:
- 1 ½ cup coconut milk
- 2 tablespoon maple syrup or honey if not vegan!
- Blend together the mango layer (thaw the mango if using frozen) ingredients until you have a puree. Once you have a puree, scoop about 2 tablespoon into each popsicle mold.
- In a bowl or blender, mix together the coconut layer ingredients and fill the rest of the popsicle molds with this. Add your popsicle sticks and freeze for about 5 hours before enjoying!
