Paleo & Vegan Mint Chip Ice Cream

This mint chocolate chip ice cream is paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

Ingredients
  

  • 1 15 oz. can of coconut milk full fat
  • 2 ripe avocados
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ½ cup mini non-dairy chocolate chips

Method
 

  1. In a blender, add the coconut milk, avocados, and maple syrup. Blend until smooth.
  2. Add in the extracts and blend again. Fold in the chocolate chips.
  3. In a loaf pan, pour the ice cream mixture in and place in the freezer to set for about 6 hours. Scoop and enjoy!
