Method
- In a blender, blend the avocado, coconut cream, extracts, and maple syrup until smooth. Add the chocolate chips and pulse a few times until well incorporated.
- Pour the mixture into a popsicle mold and freeze for at least 8 hours.
- Once the popsicles are frozen, melt the chocolate chips and coconut oil until smooth and dip the ice cream bars into the chocolate. Return to freezer to let harden and enjoy!
