These mint chip ice cream bars are the perfect summertime (or any time of year!) treat! They're made with a coconut cream and avocado base that makes them so so creamy. They're subtly sweet while reminding me exactly of my favorite mint chip ice cream from childhood. The avocado also adds the perfect subtle green color! They're paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so tasty!

- avocado
- coconut cream
- maple syrup
- peppermint extract
- vanilla extract
- non-dairy chocolate chips

Paleo & Vegan Mint Chip Ice Cream Bars
These mint chip ice cream bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, simple to make, and absolutely delicious!
Ingredients
- 1 15 oz. can of coconut cream
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- 1 small avocado
- ½ cup non-dairy chocolate chips
For the Chocolate Coating:
- ⅔ cup non-dairy chocolate chips
- 1 teaspoon coconut oil
Instructions
- In a blender, blend the avocado, coconut cream, extracts, and maple syrup until smooth. Add the chocolate chips and pulse a few times until well incorporated.
- Pour the mixture into a popsicle mold and freeze for at least 8 hours.
- Once the popsicles are frozen, melt the chocolate chips and coconut oil until smooth and dip the ice cream bars into the chocolate. Return to freezer to let harden and enjoy!
