Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
In a bowl, mix together the base/crumble ingredients until you have a dough. Press ⅔ of the dough into the prepared pan and bake for 10 minutes.
While the base is baking, add your peaches to a small saucepan and cook over medium/low heat until soft. Mix in the maple syrup, vanilla, cinnamon, and tapioca flour and continue to cook until thickened a bit.
Remove the base from the oven and add your peach filling. Crumble the remaining ⅓ of the dough evenly over top of the filling ad return to the oven to bake for another 18-20 minutes.
Let the bars cool completely in the fridge for at least 1 hour before slicing and enjoying!
