    Paleo & Vegan Peach Cobbler Bars

    These peach cobbler bars are the most perfect summer treat! They're made with super simple ingredients that I know you'll love. These cobbler bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • coconut flour
    • maple syrup
    • vanilla extract
    • coconut oil
    • tapioca flour
    • peaches (fresh or frozen)

    Paleo & Vegan Peach Cobbler Bars

    These peach cobbler bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    For the base and crumble topping:
    • 2 cup almond flour
    • 2 tablespoon coconut flour
    • 1 teaspoon cinnamon
    • ¼ cup maple syrup
    • 1 teaspoon vanilla extract
    • ⅓ cup coconut oil melted
    For the peach filling:
    • 2 cup peaches fresh or frozen
    • 1 tablespoon maple syrup
    • splash of vanilla extract
    • 1 tablespoon tapioca flour
    • pinch of cinnamon

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. In a bowl, mix together the base/crumble ingredients until you have a dough. Press ⅔ of the dough into the prepared pan and bake for 10 minutes.
    3. While the base is baking, add your peaches to a small saucepan and cook over medium/low heat until soft. Mix in the maple syrup, vanilla, cinnamon, and tapioca flour and continue to cook until thickened a bit.
    4. Remove the base from the oven and add your peach filling. Crumble the remaining ⅓ of the dough evenly over top of the filling ad return to the oven to bake for another 18-20 minutes.
    5. Let the bars cool completely in the fridge for at least 1 hour before slicing and enjoying!
