- tapioca flour
- peaches (fresh or frozen)

Paleo & Vegan Peach Cobbler Bars
These peach cobbler bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
For the base and crumble topping:
- 2 cup almond flour
- 2 tablespoon coconut flour
- 1 teaspoon cinnamon
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ⅓ cup coconut oil melted
For the peach filling:
- 2 cup peaches fresh or frozen
- 1 tablespoon maple syrup
- splash of vanilla extract
- 1 tablespoon tapioca flour
- pinch of cinnamon
Instructions
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- In a bowl, mix together the base/crumble ingredients until you have a dough. Press ⅔ of the dough into the prepared pan and bake for 10 minutes.
- While the base is baking, add your peaches to a small saucepan and cook over medium/low heat until soft. Mix in the maple syrup, vanilla, cinnamon, and tapioca flour and continue to cook until thickened a bit.
- Remove the base from the oven and add your peach filling. Crumble the remaining ⅓ of the dough evenly over top of the filling ad return to the oven to bake for another 18-20 minutes.
- Let the bars cool completely in the fridge for at least 1 hour before slicing and enjoying!
