Paleo & Vegan Peppermint Brownies

These peppermint brownies are fudgy, paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

For the Brownie Base:
  • ¼ cup coconut oil melted
  • ½ cup smooth, natural almond butter
  • ½ cup coconut sugar can sub regular sugar if not paleo!
  • 2 flax eggs 2 tablespoon ground flax mixed with 6 tablespoon water
  • ½ cup cacao powder unsweetened
  • 1 teaspoon vanilla extract
  • teaspoon peppermint extract
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup almond flour
For the Fudge Frosting:
  • cup coconut cream
  • cup non-dairy chocolate chips
  • teaspoon peppermint extract

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, mix together all brownie base ingredients until well combined. Press evenly into the prepared pan and bake for 16-18 min. Let cool in the fridge for at least 20 min.
  3. In a small saucepan, melt together the fudge frosting ingredients until smooth. Spread evenly over top of the brownie base and return to the fridge to set for at least an hour. Slice and enjoy!
